Every fall, this dish makes its way to our table. A hollowed pumpkin is filled with a hearty mixture of ground beef, rice, vegetables, and a savory sauce, then baked until the pumpkin itself becomes tender and scoopable. The result is a cozy, comforting dinner that feels like the season itself—warm, colorful, and perfect for family.

1 pumpkin, about 10 inches in diameter – top cut open to form a large bowl and cleaned out
4 cups hamburger or other ground meat
2 cups chopped onions
2 cups chopped celery
1 cup chopped green pepper
1 cup sliced mushrooms
1 cup chopped green beans
1 cup thinly sliced carrots
1 cup frozen corn
One 10 oz. can cream of chicken soup
¼ cup soy sauce
2 tbs brown sugar
2 cups rice, cooked
Preheat oven to 375°F.
Brown the hamburger and set aside.
In the same pan, sauté onions, celery, peppers, and mushrooms until soft.
Add all remaining ingredients and mix well. Let the mixture simmer gently.
Spoon the mixture into the cleaned pumpkin. Replace the pumpkin lid.
Bake for about 2 hours in a DaTerra Cucina Dutch oven, until the pumpkin flesh is tender when pierced with a fork.
To serve, scoop out the filling and scrape some of the pumpkin’s soft flesh along with it.
