- ½ cup roasted chestnuts (available peeled and ready to use)
- ½ cup butter (or olive oil), divided
- 1 tablespoon poultry seasoning
- ½ teaspoon fresh thyme, chopped
- 2 tablespoons finely chopped fresh parsley
