Pizza Rustica is one of those dishes that immediately signals Easter in many Italian homes. Rich, hearty, and celebratory, it is traditionally prepared once a year and shared with family over the long holiday weekend. Unlike everyday pizza, Pizza Rustica is a deep, filled pie that represents abundance after the restraint of Lent.

Known in different regions as Pizza Chiena or Easter Pie, this dish reflects the Italian tradition of saving the best ingredients for special occasions. Cured meats, cheese, eggs, and fresh herbs come together in a single bake, creating a pie that is both symbolic and deeply satisfying.

Historically, Pizza Rustica was often baked on Holy Saturday and served cold or at room temperature on Easter Sunday. This made it ideal for gatherings, picnics, and long meals where everyone could help themselves to another slice.

This version stays true to that tradition, using a simple pizza dough crust and a classic filling of ricotta, mozzarella, cured meats, spinach, and eggs. Baked directly in a DaTerra Cucina fry pan, the pie holds its shape beautifully and transitions easily from oven to table.

Ingredients

Dough

  • 2 lbs pizza dough

Filling

  • 500 g ricotta cheese
  • 4 eggs, slightly beaten
  • 100 g mozzarella cheese
  • 50 g grated Parmesan or Pecorino or Grana Padano cheese
  • 250 g boiled ham
  • 100 g spicy salami
  • 8 oz frozen chopped spinach 226 g
  • 2 hard boiled eggs
  • 1 chopped sautéed leek
  • 4 to 6 fresh sage leaves

Instructions

  1. Arrange the sage leaves in the bottom of an 11 inch DaTerra Cucina fry pan. Roll out two thirds of the pizza dough on a work surface and transfer it to the fry pan, covering the sage leaves completely.
  2. Prepare the filling by cubing all filling ingredients. Place them in a large bowl together with the ricotta cheese and slightly beaten eggs. Mix until well combined. Pour the filling into the dough lined fry pan and gently place the hard boiled eggs within the filling.
  3. Roll out the remaining one third of the dough and cover the top of the pie. Pinch the bottom and top dough together to seal.
  4. Bake in a preheated 175 C or 325 F oven for about 1 hour and 15 minutes.
  5. Allow the pie to cool slightly, then carefully invert it onto a cutting board.
  6. Let the Pizza Rustica cool completely before slicing.

Serving and Tradition

Pizza Rustica is best enjoyed once it has had time to rest, allowing the filling to set and the flavors to come together. It is commonly served in slices as part of an Easter spread, alongside breads, salads, and simple vegetable dishes.
