There’s something magical about the combination of pork and figs. The tender, savory meat of pork tenderloin contrasts beautifully with the natural sweetness of figs, and when paired with earthy mushrooms and a splash of white wine, the result is a dish that feels both rustic and refined.

This recipe, Filetto di Maiale con Fichi e Funghi, is a nod to the Italian countryside where seasonal ingredients shine and simplicity allows flavors to speak for themselves. It’s the kind of meal that feels special enough for guests yet easy enough to enjoy on a weeknight with family.

Ingredients

  • 2 cups fresh figs, sliced in halves or quarters
  • 1 pork tenderloin
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 2 cups mushrooms, sliced
  • ¼ cup white wine
  • 3 tbsp butter
  • Olive oil
  • Salt and pepper
  • Garlic powder

Directions

  1. Preheat oven to 400°F (200°C).
  2. Slice figs and set aside.
  3. Season pork tenderloin with salt, pepper, and garlic powder.
  4. Heat a 13” DaTerra Cucina skillet over medium-high heat and add a splash of olive oil.
  5. Once hot, sear the tenderloin on all sides until golden brown.
  6. Remove pork from skillet and place it in a roasting pan. Roast in the oven for 15–20 minutes, or until internal temperature reaches 145°F.
  7. Meanwhile, in the same skillet with the drippings, add 2 tbsp butter. Sauté garlic and mushrooms over medium heat until softened.
  8. Add figs and cook until just tender, then deglaze the skillet with white wine. Stir in the last tablespoon of butter to finish the sauce.
  9. Remove pork from oven and let rest covered for 5-10 minutes. Slice into medallions, and spoon the fig and mushroom sauce over the top.

Serving Suggestions

This pork tenderloin pairs beautifully with creamy polenta, roasted potatoes, or a simple arugula salad dressed with lemon and olive oil. A crisp white wine like Pinot Grigio or a classic red such as Chianti makes a perfect match.
