Spring cooking naturally leans toward ingredients that do not need much handling. You work with what is fresh, keep the process straightforward, and let everything come together without overcomplicating it. This one pan chicken dish follows that approach.

Artichokes and asparagus are both closely tied to spring, especially across Mediterranean and Italian cooking. They are often paired with olive oil, citrus, and herbs. These ingredients enhance their natural flavor instead of masking it. This dish builds on that idea, bringing everything together in one pan for a balanced and practical meal.

As the chicken cooks, it releases its juices, which combine with the oil, vinegar, and spices. By the time the vegetables are added, they cook directly in that base and absorb the flavor already built in the pan.

At DaTerra Cucina, this is the kind of cooking we always go back to. One pan, steady heat, and ingredients that work together naturally. No extra steps, just a complete meal done properly.

Why This Combination Works

Chicken thighs are ideal here because they stay tender and flavorful even with longer cooking time. The skin helps retain moisture and adds texture as it cooks.

Artichokes bring a subtle earthiness, while asparagus adds a lighter and fresher note. Together, they balance the richness of the chicken.

Lemon slices roast along with everything, softening their sharpness and adding a gentle citrus flavor throughout the dish.

The marinade is simple but well balanced. Vinegar helps tenderize the chicken and cuts through the richness of the oil, while paprika and coriander add warmth without overpowering the dish.

Ingredient Notes and Practical Tips

  • Frozen artichoke hearts hold their shape well during cooking. If using canned, make sure they are drained and patted dry.
  • Asparagus is added later to keep its texture intact and avoid overcooking.
  • Fresh herbs like dill, parsley, or basil added at the end help bring everything together.

Cooking with the DaTerra Cucina 13-inch Fry Pan

This recipe is cooked entirely on our DaTerra Cucina 13-inch Fry Pan, which is now back in stock.

The wide surface allows the chicken and vegetables to cook together in one layer, while everything stays in the same pan as it roasts. As the dish cooks, the juices from the chicken combine with the marinade and coat the vegetables, building flavor naturally.

It also keeps the process simple. From cooking to serving, everything happens in one pan, making it practical for everyday meals.

Ingredients

  • ¼ cup + 2 tbsp olive oil
  • ¼ cup white vinega
  • 1 teaspoons garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon dried onion flakes
  • 1 teaspoon paprika powder
  • ½ teaspoon crushed red pepper flakes
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 3 lbs bone-in, skin-on chicken thighs
  • 1 lemon sliced into ¼ inch rounds
  • 12-ounce bag frozen artichoke hearts see notes re: using canned below
  • 1 bunch of asparagus, woody ends trimmed and then cut in half crosswise
  • ¼ cup freshly chopped dill, for serving (optional, you can also substitute parsley or basil here)

Instructions

  1. Preheat the oven to 375 F
  2. In a large bowl, whisk together the ¼ cup avocado oil, white wine vinegar, garlic powder, coriander, onion powder, paprika, crushed red pepper flakes, salt and pepper until well combined
  3. Pat the chicken very dry. Add to the avocado oil mixture and toss until very well combined and the chicken is evenly coated in the mixture
  4. Place the chicken, skin side up, on the DaTerra Cucina 13-inch Fry Pan. Transfer to the oven and bake for 20 minutes
  5. When the cook time is complete, remove the pan from the oven and keep the oven on. Scatter the lemon slices, the frozen artichoke hearts, and the asparagus across the pan and gently toss into the chicken juices to the best of your ability. Drizzle the remaining avocado oil over everything and gently toss once more. Nestle the chicken, skin side up still, into the vegetable mixture and return to the oven. Continue to cook until the chicken is cooked through, 15 to 20 more minutes
  6. Remove from the oven and allow to cool for 8 to 10 minutes before serving. I like to sprinkle mine with fresh dill, but it is good as it is. You can also substitute parsley or basil

Final Thoughts

This is the kind of meal that fits easily into a regular routine. It is straightforward, uses simple ingredients, and does not require multiple steps or extra cookware.

It is also flexible. You can adjust the vegetables, change the herbs, or pair it with a simple side depending on what you have.

Everything cooks together, everything works, and cleanup stays minimal.
