Teriyaki comes from a Japanese cooking technique where food is cooked with a glaze of soy sauce, sugar, and mirin. The goal is a balanced flavor that is savory with a light sweetness, finished with a slightly glossy coating.

In many home kitchens today, that same flavor is adapted into simpler cooking methods. Instead of grilling, it’s often done in the oven or on the stovetop, depending on what is more practical. This version uses the oven and keeps everything on one surface to make the process more straightforward.

For this recipe, everything is cooked on DaTerra Cucina Cookie Sheets. Spreading the chicken and vegetables across a flat surface allows proper roasting instead of steaming. The chicken cooks evenly while the vegetables develop light browning around the edges.

Using a dependable cookie sheet matters at this temperature. At 400 degrees, you want steady heat across the surface so nothing cooks unevenly. It also helps prevent sticking and makes cleanup more manageable after cooking.

Ingredients

  • Chicken (we used boneless thighs)
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Carrots
  • Bok choy
  • Red onion
  • Broccolini
  • ½ cup Teriyaki sauce
  • 2 tbsp sriracha

How to Make It

  1. Preheat oven to 400 F
  2. Cut up chicken and toss in a bowl, drizzle with olive oil, salt and pepper and a little garlic powder
  3. Chop up an array of veggies — for this we used carrots, bok choy, red onion and broccolini
  4. Arrange chicken on one ½ of your DaTerra Cucina Cookie Sheets and the veggies on the other ½
  5. Bake at 400 for 20 - 30 minutes, stir chicken and veggies and check for doneness
  6. Enhance a little store bought teriyaki with a little sriracha for a sauce — ½ cup teriyaki sauce and 2 tbsp sriracha, mix and pour over the chicken
  7. Cook for approximately 10 minutes more to incorporate sauce
  8. Serve chicken and veggies with your favorite rice or noodles

Notes While Cooking

Adding the sauce later prevents it from burning in the oven and keeps the flavor balanced. The sriracha adds mild heat without overpowering the teriyaki.

The vegetables can be adjusted depending on what’s available. The cooking time and method stay the same.
