2 bone-in pork chops
2 large peaches or nectarines
2 tbsp balsamic vinegar
1 tbsp fresh rosemary
2 tbsp olive oil
1 tbsp butter
Optional: splash of white wine
Salt and pepper, to taste
1. Roast the Fruit
Preheat your oven to 350°F. Slice the peaches and spread them on a baking sheet. Drizzle with 1 tbsp olive oil and sprinkle with rosemary. Roast for 15–20 minutes, stirring occasionally, until softened but not burnt.
Remove from the oven, drizzle with balsamic vinegar, and set aside while the pork cooks.
2. Cook the Pork
