Creamed corn is one of those side dishes that works just as well for a simple family dinner as it does for a larger holiday spread. It is rich, familiar, and easy to pair with roasted meats, grilled dishes, vegetables, and other classic comfort foods.

Unlike canned cream-style corn, this homemade version gives you full control over the texture and flavor. The corn is cooked in a smooth onion and milk base, then finished with heavy cream, fresh thyme, and optional Parmigiano. Part of the corn is blended to thicken the sauce naturally while leaving enough whole kernels for texture.

The entire dish comes together in about 30 minutes using the DaTerra Cucina 2.6 Qt Saucepan.

A Simple Side Dish with Plenty of Texture

Creamed corn has long been served as a comforting side dish in American home cooking. Traditional versions often combine corn with milk, butter, and a thickening ingredient to create a soft, creamy consistency.

This recipe follows the same familiar idea but adds a few details that make the finished dish smoother and more flavorful.

The onion is first cooked in butter until tender, then blended with milk. This creates a smooth base without leaving noticeable pieces of onion in the sauce. Fresh thyme adds a mild herbal note, while white pepper provides seasoning without changing the light color of the dish.

Heavy cream gives the corn its richness, and cornstarch helps the sauce thicken quickly and evenly. The optional Parmigiano adds a savory finish that balances the natural sweetness of the corn.

Fresh, Frozen, or Canned Corn

One of the best things about this recipe is that it can be prepared throughout the year.

Fresh corn is a great choice when it is in season and naturally sweet. Frozen corn is convenient and usually retains good flavor and texture. Canned corn also works well, as long as it is thoroughly drained before cooking.

The sweetness of the corn may vary depending on which type you use. Naturally sweet corn will not need any added sugar, while regular corn can be balanced with the small amount suggested in the Cook’s Note.

Ingredients

Main

  • 4 cupsĀ corn kernels, frozen, fresh, or canned and drained
  • 1 smallĀ onion, finely diced
  • 2 TbspĀ butter
  • ½ cupĀ heavy cream
  • ¾ cupĀ milk

Seasoning & Finish

  • 1 TbspĀ cornstarch
  • ½ tspĀ salt
  • ¼ tspĀ ground white pepper
  • 1 sprigĀ fresh thyme
  • 4 TbspĀ Parmigiano, optional

Instructions

Prepare

  1. Place your DaTerra Cucina Saucepan over medium heat and add the butter. Once melted, add the diced onion and cook until soft and translucent, about 4 to 5 minutes.

  2. Pour in the milk. Using an immersion blender, blend the onion and milk together until completely smooth.

Cook

  1. Add the corn kernels. If using frozen corn, cook for 2 to 3 minutes until warmed through. Season with salt, white pepper, and thyme.

  2. Dissolve the cornstarch in the heavy cream, then add both to the corn and stir to combine.

  3. Bring to a gentle simmer and cook, stirring occasionally, until the sauce thickens, about 3 to 5 minutes.

Finish

  1. Using an immersion blender, blend half the corn for a creamy texture with some whole kernels, or blend all of it for a fully smooth consistency. Stir in Parmigiano if using. Taste, adjust seasoning, and serve hot.

How to Get the Right Consistency

The final texture depends on how much of the corn you choose to blend.

For a more traditional creamed corn, blend only half of the mixture. This creates a thick, creamy sauce while keeping plenty of whole corn kernels in every serving.

For a smoother result, blend all of the corn until it reaches your preferred consistency. This version can also be served beneath roasted chicken, pork, seafood, or vegetables.

Keep the heat at a gentle simmer after adding the cream. High heat can cause dairy-based sauces to scorch or separate. Stirring occasionally also helps the sauce thicken evenly.

When using an immersion blender, make sure the blade is fully submerged before turning it on to reduce splashing.

Cook’s Note

For sweet corn, skip added sugar. For regular corn, stir in 1 Tbsp granulated sugar with the seasoning. Milk and cream can be swapped for half-and-half. For a casserole finish, top with breadcrumbs and Parmigiano and broil until golden.

What to Serve with Creamed Corn

Creamed corn pairs easily with many main dishes. Serve it with roasted chicken, pork chops, grilled steak, baked fish, barbecue, or a simple vegetable dinner.

It can also be added to a holiday menu alongside mashed potatoes, roasted vegetables, stuffing, and other familiar sides.

For a more finished presentation, top the corn with breadcrumbs and Parmigiano, then broil until lightly golden. This adds a crisp layer that contrasts with the creamy corn underneath.

This recipe is prepared entirely in the DaTerra Cucina 2.6 Qt Saucepan, from melting the butter and softening the onion to simmering the corn and cream.

A controlled, even simmer is important when preparing cream-based dishes. The saucepan gives the ingredients enough room to cook and thicken without requiring a larger pot, while its size also makes it easier to blend the corn directly in the pan.

Beyond creamed corn, the 2.6 Qt Saucepan can be used for sauces, soups, grains, vegetables, custards, and other everyday stovetop recipes.
