Crispy Sushi Rice Bites take classic sushi elements and give them structure. Instead of soft rolls, the rice is pressed into a firm layer, chilled, cut cleanly, and fried until golden. Each piece becomes a stable base for spicy tuna, avocado, and jalapeño.
This recipe works because it controls texture at every stage. The seasoning balances the rice. The chilling creates stability. The clean cuts ensure even crisping. And assembly happens just before serving to preserve contrast.

Ingredients
Sushi Rice
- Sushi rice, cooked (we use a rice cooker)
- Rice vinegar
- White sugar
- Salt
Toppings
- Sashimi-grade tuna, chopped into small, bite-sized pieces
- Sriracha
- Kewpie mayonnaise
- Sesame oil
- Green onion, finely chopped
- Sesame seeds
- Avocado slices
- Jalapeño slices
Optional: soy sauce, lime juice, regular mayo, brown sugar, lemon juice.
Method
- Start by mixing the rice vinegar, sugar, and salt in a small bowl until dissolved.
- Place the rice and water in a small pot without a lid over medium-high heat. Once it begins to bubble along the edges, cover with a lid and lower the heat to low. Cook for 13 minutes or until the water is absorbed. Remove the pot from the heat and let it sit for 10 minutes with the lid on. (Or, for ease, use a rice cooker.)
- Remove the lid and pour the sushi seasoning over the cooked rice. Gently mix until evenly combined, keeping the grains intact.
- Press the seasoned rice into a flat, even layer in an 8×8 inch baking dish. We use our Il Due here to maintain consistent thickness. Refrigerate overnight or at least 6 hours to allow the rice to firm completely.
- Once set, cut the chilled rice into 20 small squares or 15 rectangles using the DaTerra Cucina Santoku Knife. A sharp blade ensures clean edges, which helps the rice crisp evenly during frying.
- Heat oil in a large skillet over medium heat and fry the rice pieces for about 2 to 3 minutes per side until golden and crisp on all sides. Transfer them back onto the Il Due to rest briefly before topping.
- In a small bowl, mix together the raw tuna, sriracha, Kewpie mayonnaise, sesame oil, green onion, and salt.
- Top each crispy rice piece with a slice of avocado, a spoonful of the tuna mixture, a slice of jalapeño, and a sprinkle of sesame seeds.
- Serve immediately while the rice remains crisp.
This recipe relies on discipline more than complexity. Proper chilling creates structure. Clean cuts ensure uniform browning. Even frying builds texture. Fresh toppings are added last to preserve contrast.
If raw fish is not preferred, the same crisp rice base can be topped with teriyaki chicken or smashed avocado without changing the method.
