Why We Used Farfalle

We used farfalle, also known as bow-tie pasta, because its shape works especially well in pasta salads. Ingredients

Pasta and Corn Mixture

  • 1 lb. pasta - cooked. (We used farfalle.)
  • ½ cup chopped white onion
  • ¼ cup of green onions
  • 2 cups frozen corn
  • Optional: add 1 cup chopped cooked rotisserie chicken

Creamy Lime Dressing

  • 1/2 cup mayonnaise
  • 1/3 cup Mexican crema or sour cream
  • 1 lime, juiced
  • 1 tsp. chili powder
  • 1/4 tsp. cayenne pepper
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup crumbled cotija or feta
  • ¼ cup of fresh chopped cilantro

Directions

Cook the Pasta

  • Cook pasta according to package directions. Rinse in cold water to stop cooking process and chill.

Sauté the Corn Mixture

  • Place the DaTerra Cucina frying pan over medium-high heat. Heat thoroughly. 
  • Drizzle in some olive oil and add the cooked chicken, onion, and corn. Sauté for a few minutes to soften the onion and thaw the corn.
  • Let cool.

Make the Dressing

  • In a medium bowl, make the dressing with the remaining ingredients.

Toss and Chill

  • Toss the pasta and corn mixture with the dressing.
  • Chill for at least 1 to 2 hours.
  • Top with fresh cilantro and a sprinkle of cotija cheese.

  • The chilling time is an important part of this recipe.
